Creamy parsnip and carrot soup

Summer lingered a little but it is definitely going away soon my part of the world. Days are getting shorter and colder and very soon, Winter will have taken over. I love Winter though. You get to cozy up by the fire with a good book and drink chai-spiced tea or tasty hot chocolate, wear boots and long skirts and knits and scarves, smell the snow... AND it also means it's almost Christmas time!

Food wise, I love soup and even more in Winter. It's comforting and it fills you up. For this recipe, I chose parsnips as I feel this vegetable doesn't really get the success it deserves!It is labelled as a "forgotten vegetable" which is so unfair.
Hold on, little parsnip, you're NOT forgotten! I'll use you in my kitchen as often as possible! :-)

Parsnips are full of vitamins, fiber and potassium (good for your heart, muscles and kidneys). It tastes quite sweet and pairs well with carrots as they actually are from the same family.



INGREDIENTS (for 2 people)

3 medium parsnips
2 medium carrots
1 medium spring onion
200 ml coconut milk
A small ginger piece
Fresh coriander leaves
Pumpkin seeds
Sunflower seeds
Pink Himalayan salt and freshly ground pepper to taste
Sprinkle of Cayenne pepper

METHOD:

Chop up the veg and steam the parsnisps, carrots and onion for about 15 to 20 minutes.
Once quite mushy, put in blender with coconut milk, ginger, salt and pepper.

Serve with fresh coriander leaves, top with pumpkin and sunflower seeds and sprinkle with Cayenne pepper

Small macaroni and avocado sauce

This is my favourite lunch ... or dinner... I could even have it at breakfast I love it so much.

This is not really a recipe ... I mean... It's so easy! But someone asked me the other day about my go-to dish when I don't really have time or if I want something comforting...well, this is it.


See? E A S Y!

INGREDIENTS (for 1 person):

125g small macaroni (gluten free if you can)
1/2 lime juice
1/2 avocado (or a whole one if you're greedy like me) ;-)
1 teaspoon garlic powder
1 teaspoon paprika
Chili flakes (optional)
Pink Himalayan salt and freshly ground pepper to taste

METHOD:

Cook your pasta Al Dente
Meanwhile, mash your avocado with the lime juice, garlic, salt, pepper, paprika.
Combine the two and sprinkle with nutritional yeast. or/and chili flakes.
This dish also tastes great served cold as a pasta salad.

No-bake vegan choc' coco balls

With Christmas coming up, let's talk about chocolate truffles. Yes they are lovely and very chocolatey but they are also high in fat and can quickly become sickening. As an Endogirl, I can't have dairy or refined sugar so these are an UH-mazing alternative!

Today I made these beautiful vegan, gluten-free and most importantly guilt-free chocolate and coconut truffles. They are yummy and light and perfect for a quick dessert or just a chocolate craving. I mean just look at' em beauties!




INGREDIENTS:
(for about 10 small balls)

1 1/2 mug of shredded coconut
2 Tablespoons of coconut cream
1 Tablespoon of raw unsweetened cocoa powder
2 Tablespoons of melted coconut oil
3 Tablespoons of maple syrup
1 Teaspoon of vanilla extract
1 pinch of Himalayan or Guerande salt

METHOD:

In a food processor, mix 1 mug of shredded coconut (keep the rest for later), the melted coconut oil and the cocoa powder until well combined. You may want to scrape down the sides a couple of times.
Add the coconut cream, vanilla extract, maple syrup and salt. Mix again until you get a paste.
Place the remaining shredded coconut on a plate, shape the paste into small balls and roll them into the coconut.
Refrigerate for one hour minimum. They will be perfect after a few hours in the fridge. Enjoy!

Vegan and Gluten Free waffles

When I had to cut out gluten from my diet, it was very hard at first. I realized I would have to stop eating a lot of things I liked. Good things like pizza, bread, pasta.... oh, and waffles!! I couldn't say good bye to waffles!
It took me a couple of tries to get these babies exactly the way I wanted them to be: Crunchy on the outside and light and fluffy on the inside. I am so happy to say that these waffles are absolutely delicious. And the batter takes less than ten minutes to make! I hope you get a chance to make them and enjoy them. INGREDIENTS
(for a dozen of small round Belgian style waffles)

1 mug of chickpea flour (buckwheat works great too)
1/2 mug of rice flour
2 tablespoons of raw cane sugar
1 mug of warm almond milk 
3 tablespoons of melted vegan butter (or coconut oil)
1 tablespoon of vanilla extract
1 pinch of salt
1 teaspoon of baking powder

METHOD:

Whisk together the flours, sugar, salt and baking powder. Add the melted butter then the lukewarm milk and vanilla extract. Stir well until combined.
Preheat your waffle maker and cook as directed in the manual.
Enjoy with maple syrup, raw honey or fruit and marmelade. Bon appetit!
(If there are any left (which is NEVER with me) you can easily pop them in the toaster to heat them up)
